I made a very unique dish this week called Hibiscus Enchiladas. It originated from Oaxaca Mexico and is a perfect vegetarian or healthy dish. It has a very unique flavor – it was a little tart for me so I think next time I will reduce the amount of Hibiscus and increase the carrot and Jicama in the filling. This is a truly beautiful dish so if you plan on entertaining this would be perfect. It would be really fun for a Mexican themed party! My husband and I have had a goal to visit his family in Costa Rica for almost 2 years. We finally saved enough money and were able to stay from April 25 through May 9th. I highly recommend anyone who wants to go to take at least 2 weeks off… unless you are just wanting to stay at a resort, there is way too much to do in 5 or 7 days. Actually, it was impossible for us to see everything we wanted to in 2 weeks!
